Here is a picture of my new 2.5" thick island top placed on top of my existing island top.  

Replacing an island top is pretty simple. Just open up the cabinets underneath and remove everything, including the drawers.

After everything is out, locate the screws holding down the original top.
 

Since my island is on the smaller side, there are only 6 screws holding it down at the corners.  

Once the screws are removed, simply remove the old top.  

Replace the new top and center it. Then drill pilot holes for the screws and then screw the new top in place.

That's it!

The new counter top, however, is significantly more work because I have to build the counter for it to go on top of!
